Gingerbread Biscuits!

Hey everyone 💙

Before I start if you are someone who can’t think about Christmas until the 1st of December I’m sorry but this year I have decided Christmas starts now!!!

Countdown to Christmas – 38 days! 

I love Christmas day but who else agrees that the best part is actually the run up to it. Putting up the decorations, the parties, the Christmas films and pop up ice skating rinks.

So with that being said why wouldn’t I do a few blog posts in the run up to Christmas 2017 ho ho ho.

Christmas blog post #1 – Quick and easy (for people who don’t bake) gingerbread cookies!

These are what mine turned out like  ☟ ☟ ☟  I went for a holly leaf with red and silver decorations and a hell of a lot of icing sugar sprinkled on top (half to look like snow half to hide all the mistakes) loving my little tinsel and snowflake photo set up tho!

I think they look quite tasty? Probably wouldn’t put so many break your teeth hard candy balls on next time 😂 but they look cute and for a quick easy sweet treat at Christmas time I think they turned out pretty good.

So if you’re like me and trying to get into the festive spirit and want to make cute gingerbread biscuits to show everyone you’re a domestic goddess but have never baked a day in your life here’s what you need/what I used to make them (Items will be linked):

👩‍🍳 Gingerbread mix + 40g Butter + 30g Golden syrup + 3-4 tbs Water

👩‍🍳 Decorations:  Silver candy ballsHolly and berry sprinkles

👩‍🍳 Holly leaf cookie cutter (There’s so many other Christmas shapes you could use but holly leafs are small and easy to decorate)

👩‍🍳 Green natural food Colouring

👩‍🍳 Icing sugar – to make the icing and to sprinkle on top when dry

Now for the instructions that I ever so carefully copied from the back of the gingerbread mix packet just for you:

Baking

1. Pre-heat oven to 190ºC/ Fan 170ºC /Gas Mark 5.

2. Empty the gingerbread mix into a large mixing bowl and add the butter, water and golden syrup.

3. Mix well to form soft dough.

4. Roll out the dough to 5mm depth on a lightly floured surface.

5. Cut out the gingerbread biscuits using a shaped cutter.

6. Place on a lightly greased baking tray and bake in the centre of the oven for 5-10 minutes, depending on the biscuit size, until golden brown.

7. Leave to cool on the tray for 5 minutes then move onto a cooling rack. 

Once they are cooling down you can get on with making the icing……

Decorating 

1. Put a handful of icing sugar and 2 table spoons of food colouring in a bowl then little by little add water and stir until thick and smooth consistency.

2. Pour icing sugar mix over the biscuits until evenly covered.

3. Add sprinkles and decorations whilst icing sugar is still wet so they stick on firmly.

4. Leave to dry for 20 – 25 mins then lightly sieve over the biscuits with dry icing sugar to create snow like effect.

5. (optional) Take cute AF picture using Christmas props and upload to Instagram.

Just an idea: If you work in an office type environment I think these would be a great no fuss festive homemade snack to take in and share with your colleagues
