Welcome back to another Christmassy blog post.

Keeping with the sweet treats theme I thought I’d try making some cupcakes because who doesn’t love a cupcake or 12 now and again!

We all know I don’t have much experience when it comes to baking but what better time to try and give it a go than at Christmas time.

I AM SO PLEASED WITH HOW THESE CAME OUT!!! AND THEY ACTUALLY TASTE NICE TOO YASSSSSSS 😍😍😍😍😍😍😍

But don’t they look yummy? Such an easy semi-healthy homemade treat to enjoy throughout the festive season! And I say semi healthy because they are Vegan. Why vegan you ask? My mum is vegan and I hardly eat eggs so didn’t want to buy a whole packet for just one load of cupcakes and trust me when I say they taste exactly the same if not better dairy free!

Ingredients needed:

Cakes

100g self-raising flour

50g caster sugar

1/2 tsp baking powder

100ml soya milk

2 tbsp sunflower oil

1/2 tsp lemon juice 

Mix all the dry ingredients together first then add the wet ones mix together well until you get a smooth texture.

Place in cupcake cases, cook in oven until risen and golden in colour.

Icing

200g icing sugar (add more for thick icing)

4 tbsp soya milk

Whisk until smooth. Decorating took me 10 minutes with these Asda Christmas figures and a piping bag!

That’s it easy peasy lemon squeezy. Have a go at making them! All 12 of mine got eaten so I’m ready to make another batch and need new ideas for decorating…. Send me your attempts on Instagram louiseleduc xxx
