Hope this windy and rainy February (if you’re in England… if you’re not I’m jealous) isn’t getting you down too much. It’s starting to get to me that’s for sure, very ready for spring!
Just a little in sight – I started eating vegan at the beginning of the year for Veganuary 💚… I’m happy to say I’ve stuck to it well but occasionally when I am eating out and I don’t fancy anything on the vegan menu (or there isn’t one) I do go for the vegetarian option instead. Going fully plant based is a slow process as long as I’m trying my best I am okay with that. I am not eating meat and haven’t done since December nor do I want to for foreseeable future.
To be honest this is what I eat in a day when I’m being pretty lazy I’m only cooking for myself at the moment whilst my husband is away which makes me a lot less motivated. I want to do more of these because I promise you I do cook from scratch a lot of the time but I still wanted to put this up because some days you really just can’t be bothered to make photo worthy meals so here’s my What I eat in a day lazy edition.
I am not trying to lose weight nor am I doing much (if any) exercise at the moment so I’m just eating whatever I fancy that day. I like to try and stick to a healthy diet getting my 5 a day in and not eating too much sugary things but that’s about it. I am going to be starting the gym again in March so I will be sure to post another one of these then to show you how my diet changes!
Before I have any food, every morning without fail I will have a coffee, I normally have 1-2 cups a day I probably shouldn’t but what can I say I enjoy my morning cuppa coffee. My choice of milk is Oat with coffee it taste delicious but Soya milk is normally the cheapest option so that’s what I’m having today. ☕️
I also make a Vitamin C effervescent drink with 450ml of water… Need to get some water in as soon as I wake up. 🍊

Breakfast
The first food of the day today I’ve gone for crumpets – yes they are vegan! With a plant based alternative to butter – Vitalite dairy free. I could eat the whole pack of these but going to be normal and stick with two.

I sometimes don’t feel like breakfast but know If I don’t have anything I will feel rubbish so I’ll have a smoothie instead which normally includes:
- Frozen berries
- Vegan protein powder (I’m currently using one from free soul)
- 1 banana
- Coconut water
Lunch
I had a Hummus and rocket bagel. 🥯 Love a bagel! I toast it slightly under the grill and fit as much Hummus and rocket in as I can with some fruit on the side normally a couple of satsumas or some grapes. Tasty!

I also love to have soup in the winter and whilst I have these in the cupboard I thought I would share with you the tins of soup I’m having a lot of at the moment. They are the Plant chef range from Tesco which is completely plant based.

Snacks: These are some I have on a weekly basis
- Peanuts/cashew nuts
- Dried mango
- Seed mixes
- Alpro flavoured yoghurts
- Bourbon biscuits (yes most of them are vegan – check packaging)
Drinks: 🥤 I drink a lot of water but will have a glass of orange juice and a herbal tea daily and most weeks I’ll have bottle of Coca-Cola in the fridge to have a glass in the evening (oops).
Dinner
My dinners vary day to day. There will always be a curry, a stir fry, chilli, Falafel and more like that throughout the week but tonight I had Pasta Caesar Salad 🥗 – I saw this recipe on Pinterest this is my first time trying it. It turned out pretty good and I’ll definitely be having it again. Next time I would make more dressing though!

- Lettuce
- Fusilli pasta
- Croutons (Homemade or vegan ones)
And to make the dressing in a blender add:
- Vegan mayo
- Dijon Mustard (to taste)
- I clove garlic
- 2 tbsp. lemon juice
- Pinch salt
- Pinch black pepper
Again with fruit on the side to satisfy my sweet tooth after. 🍇
